Seasonal bounty: tomatoes

Our first tomato harvest this summer. Better late than never!

Tomato tips:

  • Cooking tomatoes ‘liberates’ their red pigment lycopene, which is a heat-stable antioxidant noted to be protective from various cancers, heart disease and vision degeneration. There’s a good amount of research on lycopene and how it protects your cells from damage.
  • You get the greatest hit of lycopene from tomato paste – I always add a big dollop to my tomato-based sauces.
  • You may have heard of the Mediterranean Diet… well all those beautiful Mediterranean tomatoes are thought to be one of the reasons why this diet is so healthy (along with all the incredible olive oil).
  • Tomatoes are also an excellent source of vitamin C, biotin and vitamin K. They contain good amounts of B3, B5, B6 and folate (B9). Plus, are a great source of fibre!
