Chocolate mousse

Chocolate mousse (healthy version)

This is good. Like really good. Vegan, gluten free. Quite indulgent, but full of goodness!

Serves 4-6 (depending on size of fruit and how decadent you’re feeling!)

Ingredients:

  • 1 cup soaked cashews
  • 2 organic oranges – zest and flesh
  • 1 ripe avocado
  • pulp from 2 passionfruit OR zest and juice of 1 small lemon
  • 1/4 cup coconut oil
  • 1/8 cup maple syrup (optional)
  • 3 heaped dessertspoons cacao powder
  • Dried preservative free shredded coconut (optional)

Directions:

  • Soak cashews in water for at least 4 hours. Drain and rinse
  • Add all the ingredients (excep the shredded coconut) to a high powered blender and blend on high until smooth
  • Pour into bowls, decorate with shredded coconut
  • Refrigerate to set

I’ve made this without passionfruit / lemon and it’s still delicious.
A super-decadent version is using melted dark chocolate (omit cacao powder and maple syrup).
