This is good. Like really good. Vegan, gluten free. Quite indulgent, but full of goodness!
Serves 4-6 (depending on size of fruit and how decadent you’re feeling!)
Ingredients:
- 1 cup soaked cashews
- 2 organic oranges – zest and flesh
- 1 ripe avocado
- pulp from 2 passionfruit OR zest and juice of 1 small lemon
- 1/4 cup coconut oil
- 1/8 cup maple syrup (optional)
- 3 heaped dessertspoons cacao powder
- Dried preservative free shredded coconut (optional)
Directions:
- Soak cashews in water for at least 4 hours. Drain and rinse
- Add all the ingredients (excep the shredded coconut) to a high powered blender and blend on high until smooth
- Pour into bowls, decorate with shredded coconut
- Refrigerate to set
I’ve made this without passionfruit / lemon and it’s still delicious.
A super-decadent version is using melted dark chocolate (omit cacao powder and maple syrup).
