I love packing as many veggies into lunch as possible. Here’s one of my favourite quick and healthy lunch recipes – turmeric scrambled eggs.
Ingredients
- Extra virgin olive oil
- One heaped teaspoon of turmeric,
- Sprinkle of garam masala powder
- Shake of chilli flakes (to taste)
- Handful of nuts – I used slivered almonds (pine nuts are good too)
- 1-2 cloves of chopped garlic
- Couple of handfuls of chopped veggies – here I used broccoli and zucchini, but you can swap in whatever veggies you have (cauliflower, mushrooms, green beans, silverbeet or spinach all work well)
- 5-6 large eggs
- Slice of sourdough (optional)
Directions
- Add a good drizzle of olive oil to a pan and stir in turmeric, garam masala and chilli flakes
- Turn on the heat and warm through until spices smell aromatic (about 1-2 mins)
- Add nuts and chopped garlic, stir for a minute on medium heat
- Add chopped veggies and stir fry for a few mins until the veggies are tender
- Lightly whisk the eggs in a jug and pour into the pan
- Don’t stop stirring! Stir until eggs are cooked (remembering they continue to cook even once you turn the heat off)
- Season and serve, with or without a slice of sourdough
