These muffins are incredibly light, moist and pretty low in sugar. They are grain and gluten free and with just 5 ingredients, what’s not to love!
- 2 organic oranges
- 250g ground almonds
- 4 eggs
- 1/2 cup honey
- 2 tsp bicarb
- Boil whole oranges for 1 hour (ensure there’s enough water to cover them). Drain and allow to cool.
- Blend oranges (skin, pips and all) in a food processor
- Add remainder of ingredients to food processor and mix until combined
- Pour into muffin cases and bake at 180 degs until golden (about 15/20 mins)
