Healthy orange muffins

These muffins are incredibly light, moist and pretty low in sugar. They are grain and gluten free and with just 5 ingredients, what’s not to love!


  • 2 organic oranges
  • 250g ground almonds
  • 4 eggs
  • 1/2 cup honey
  • 2 tsp bicarb


  • Boil whole oranges for 1 hour (ensure there’s enough water to cover them). Drain and allow to cool.
  • Blend oranges (skin, pips and all) in a food processor
  • Add remainder of ingredients to food processor and mix until combined
  • Pour into muffin cases and bake at 180 degs until golden (about 15/20 mins)
